I love this South Tyrolean cake. There, I’ve declared my love for it 😍
I love travelling and discovering new places, dishes and traditions.
Have a go at making it at home and let me know if you enjoyed it as much as I did⛴️
Ingredients:
8 egg whites
180 g sugar
180 g chopped hazelnuts (or almonds)
50 g chocolate (70% dark)
coarsely grated
1 pinch of cinnamon (less than half a teaspoon)
1 pinch of ground cloves
½ lemon, grated zest
Butter for greasing the cake tin
3 tablespoons of rum
3 tablespoons of cherry jam
500 g of tinned sour cherries
200 g of fresh cream
40 g of dark chocolate
Whisk the egg whites with the sugar until stiff peaks form.
Gently fold in the hazelnuts, chocolate, cinnamon, ground cloves and lemon zest.
Pour the mixture into a greased cake tin and bake in a fan oven at 170 degrees for about 35 minutes
Leave the cake to cool, drizzle with rum and spread the cherry jam over the top.
Drain the sour cherries well and cover the cake thoroughly.
Whip the cream until stiff and pipe it onto the cake using a piping bag or a spatula.
Coarsely grate the chocolate over the cake.
I look forward to reading your comments ⛴️😃
